What would you recommend for forum software between SMF and phpBB – or something else?

Between those 2, I would go with phpBB. But UltimateWB is a much better option - the built-in UltimateWB forum app has a lot of features, and more options for controlling spam. UltimateWB used to have an integrated built-in phpBB forum early on, but then it got switched out for this custom forum app to fix the spam issues and add more features to it.

Why use the html5 input type “date” if it’s not supported in Safari?

You're right, if you use the HTML5 code
<input type="date"> 
it displays a date picker in Chrome and Firefox, but just the default text box in Safari, as the date picker is not supported there. So, I wouldn't use it, in the interest of user friendliness and cross-browser/platform compatibility. I would opt for a different method, i.e. choosing a month, day, year from menus instead - which is what UltimateWB does too for the built-in Calendar app.

What are some good alternatives to WordPress for client sites, so that it is easy for them to manage themselves?

What are your biggest issues with using DIY website builders such as Wix and WordPress?

It depends on the website builder. With Wix you don’t get as much flexibility that I would want, and also you have to just use their web hosting. This is true of similar website builders such as Weebly, Squarespace, and Shopify.
