For my directory listing, I can’t seem to find a way to change states to parish and city to town, could you please advise how this is done. 

You can customize the Language Phrases, including for "state" and "city" from your website Admin Panel > Configure Site > Social Networking > Listings configurations page:

An easy way to jump to this section when on the admin panel page is to use CTRL-F for find, to find "City" or "State" on the page.  Click on the "Save" button at the bottom of the configurations page to save your updates.
